The most important thing for processing raw octopus slice is to use fresh raw material. A good product cannot be made unless the octopus is immediately killed or is a chilled pot octopus. One can enjoy the sweetness and texture of a raw octopus if the cell membrane of octopus is not damaged during processing to the maximum extent possible.
